adlee-was-taken de4b766a5f fix(admin): update stale bart-large-mnli references left by PR #95's encoder swap ...

PR #95 swapped local_encoder's backend from NLI cross-encoding to
embedding+centroid and updated config.py's default/docstring, but missed two
consumers: the admin controls page's placeholder text (misleadingly showed
the old model name for the empty/default-inheriting field) and
docs/local-models.md's architecture description (still said "zero-shot NLI
encoder").
