Fix STEGASOO_* env vars → FIELDWITNESS_* and VERISOO_* → FIELDWITNESS_* across stego module, attest module, and frontends. Wire format identifiers (VERISOO\x00 magic bytes, STEGASOO-Z: QR prefixes) intentionally preserved for backwards compatibility.
